  • Tony Chacherre's cajun seasoning

    This came from mr Tony's cook book from 1972
    Recipe for Tony chacheres seasoning .
    1-26 oz box of salt ( i cut this to 12 oz)
    1.5 oz fine ground black pepper
    2 oz cayanne pepper
    1 oz garlic powder
    1 oz chilli powder
    1 oz accent (msg)
    Most of the shelf brands of cajun seasoning came from this basic recipe. some add onion powder and some add powdered bellpepper .
    But this is the one that started the craze.

    WOW!.... Bring on the salt eh? .... I have bought a couple of store bought Cajun seasonings that were really salty tasting also.... I did see you cut it way down, maybe I will try your recipe.... Thanks for posting

      A guy I worked with (an old cajun) had the original version of the cookbook and shared it with me. I like it, so I bought a copy...lo and behold, the spice recipe was deleted on the new version...I made a copy to keep.

      Good stuff right there...like the man says, when it is salty enough, it is seasoned to perfection.

      I bet your reduced salt version is like the Cachere's "More spice" version?

        Good post. We can't get that stuff up here in Norwegian Country
        Will for sure keep this recipe and start like you do with half the salt. Add if needed. Thanks for posting

          SuperWalmart has it. $1.98 for a 1# shaker.

            I have looked everywhere down here for it. Superwalmart, target, hyvee, no where down here carries the stuff. I wanted to use it to make SoFlaQuers finishing sauce for PP. Next time I'm in the cities, I might swing into one of the Super Walmarts and grab some and see if there is any taste difference to the recipe that has been posted here.

              Recently picked up some Slap Ya Mama to try against the Chacherrs



              Love the name. I originally thought that the Slap Ya Mama was saltier, but In looking at the back of the container, it was the exact same amount of sodium as the Cacheres...1/4 teaspoon measure was 310 Milli grams of sodium.

              The Slap Ya Mama was definitely a more defined heat.

              Both are good seasonings.

                Green can, bottom shelf. I know Cub carries it in the cities. I use a small amount of it in my pork rub, and use it like most use lowerys.
                Once you go Weber....you never call customer service....

                  Believe me, it ain't down here. All the stores carry is the Creole. Dude, were in hickville down here We don't get all that fancy smancy stuff like you big time city boys

                    Thanks Eman...Love the slap ya mama too. That is all we use now. We think the Slap Ya has less salt than the Tony's...

                            I've bought and tried and either gave away or threw out many cajun seasonings over the years including Chacherres and Slap Ya Mama and all have tasted way, way too salty to me. Until I was at Gordon's Food Service Marketplace one day and bought a 22oz bottle of their Trade East Cajun Seasoning. Even though salt is listed third on their list of ingredients, I taste very little salt in it and have only used this brand for several years now.
