  • Patriot's Beef & Shoulder Spice Rub Review....... Hickory Smoked Beef Ribs

    Got the Patriot Rub package on Thursday & opened it up..... First things I noticed were the shaker bottle & labeling were perfect..... Great label, artwork & colors..... It was centered perfectly on the plastic shaker bottle.... Great initial visual appeal.... Gave the "quality product" feeling immediately..... Finger test was next & it probably had more layers taste wise to it than I have ever tasted in a rub, not in a bad way, but very interesting.... Started out sweet with the sugar taste, then turned hot with the pepper/peppers, then the garlic & onion, then sweet-hot to finish..... Very interesting.... I like.... Had 3 buddies over for beers & we finger tasted this rub, along with Mad Hunky, Plowboys, my own & 3 others I can't remember right now & it held its own with 1 of them giving it #1 rating for the the finger test ......... So beef ribs it went on, in 3 different stages... 1) start..... 2) foiling..... 3) unfoiling & last smoke...... Ended up going 2.5-2-1.5..... 1/2 of the rack was finished naked & the other half got Sweet Baby Rays for the last hour..... Both methods turned out an excellent finished product which 1 voted for naked & 3 voted for SBR'S... I liked the naked a little better myself.... The ribs did finish with a good bit of heat, which may be due to me hitting them 3 times with rub, but the flavors were great..... I can't wait to try it on something else..... Nice Job

    Note: I rubbed the ribs with a little EVOO before applying, as the larger texture of the rub did not want to stick to the ribs.... The shaker bottle suggests applying mustard first before applying the rub, which would probably work equally as well, or better.

    On edit: I did add about 4 ounces of beer when I foiled them.

      Very nice. I'm gonna have to try the rub out, as I have never been happy with the Mad Hunky straight up with beef.

      Don't look "OverCarmed" up at all, lower sugar in this stuff?

            Glad you liked it! Most of the time I use a spicy brown mustard for a slather on beef, but beieve it or not plain mayo works really well as a slather on most meats. Thanks for the review!

                  The first 2 ingredients are raw sugar & brownulated sugar..... The finger taste test says sweet, but the sweetness cooks off & it's more of a nice lingering heat when cooked. Tried it with almonds last night & the sweet & heat combo was really good

                      It took quite some time to work that balance. Using raw sugar, and the brownulated sugar (basically dried brown sugar) keeps it from getting over carmalized or burned. When I first started working with the Brownulated sugar it took me by suprise on it's cooking properties. It does give you a nice caramilzation but doesnt burn easily. I was concerned the first time I grilled chops with the rub over a red hot pile of mesquite, but it did great even at those temps.

                      It's all about the balance!
