  • Blackened seasoning?

    I really dig a blackened steak / fish, and know there is cayenne pepper,wht and blk pepper, onion and garlic pdwrs. etc.
    Does anyone have a rockin blackened seasoning idea?
    And or other ideas of using the blackened stuff

    I make my own blackened/cajun seasoning. I found some recipes on line & developed my own from them. I put no salt in mine for health reasons & no one ever notices the absence of salt. I put it on many foods. Blackened jumbo shrimp & scallops are one of my faves. I will post the spice recipe tomorrow. I'm at work today at the Fire Dept & don't get home until tomorrow AM.

      Here you go.. This is a basic Blacken Seasoning recipe..


      1 TBS Paprika
      1 Tsp Garlic powder
      1 Tsp Onion powder
      3/4 Tsp Black pepper
      3/4 Tsp White pepper
      1 Tsp Cayenne pepper
      1/2 Tsp Dried thyme
      1/2 Tsp Dried oregano


      You know the drill... Mix all and store a air tight container..

        Will definitely try that Ken, thanks for posting it.
        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

            Here is mine. It is almost the same as Ken's.


            Cajun Seasoning



            • 1 tablespoon garlic powder
            • 1 tablespoon onion powder
            • 2 teaspoons white pepper
            • 2 teaspoons ground black pepper
            • 1 1/2 teaspoons ground cayenne pepper
            • 2 teaspoons dried thyme
            • 1/2 teaspoon dried oregano
            • 1 tablespoon paprika
            MES 30"
            A-Maze-N pellet smoker
            Weber 22" kettle
            E-Z-Que rotisserie
            Weber Smokey Joe
            Big Weber Gasser
            Cracker Smoker
