  • Chipotle Pepper BBQ Sauce

Today, among a million other things, I smoked 20 lbs jalapeños for a batch of canned chipotles in adobo. It got me wanting to try a new BBQ sauce and I must say it's quite fantastic. Maybe not new to you all, but just in case, I'm posting the recipe. Not mine either so I can't take credit for it. I do make my chipotle in adobo sauce Filipino style, so that may make a big difference.

    Ingredients
    •2 diced onions
    •6 cloves garlic, minced
•Several chipotles in adobo, to taste
    •1 cup ketchup
    •1/2 cup coffee
    •1/4 cup Worcestershire sauce
    •2 tablespoons lemon juice
    •1/4 cup apple cider vinegar
    •1/3 cup packed brown sugar
    •1 tablespoon Dijon mustard
    •2 teaspoons kosher salt

    Directions
    1) Heat 2 tablespoons of oil in a pot over medium-high heat
    2) Sauté the onion and garlic until translucent, about 3-6 minutes
    3) Place all remaining ingredients into pot and simmer gently for 20-30 minutes
    4) Blend the sauce until smooth
    5) Continue simmering until it is the consistency you desire

    Notes
You can try many variations on this sauce:
    - Use honey or molasses in place of the brown sugar
    - Try different type of vinegar
    - Use more or less chipotles for a different heat level
    - Try replacing half the onion with diced sweet red peppers

            Here ya go Craig.

7 to 10 dried chipotle peppers, de-stemmed and slit lengthwise
            1/2 an onion, diced
            1/3 cup apple cider vinegar
            2 cloves garlic, minced
            1/4 cup ketchup
            1/4 cup soy sauce
            1/4 teaspoon salt
            3 cups water

Combine all of the ingredients in a pan and simmer, covered, over low heat heat until the liquid is reduced to about a cup. This should take about an hour to an hour and a half. Once the chipotle peppers in adobo sauce has reduced you are ready to let it cool and then use or store it.

Indeed... dang... now I'm gonna have to make this one to. Because Gunny's tastes are quite exquisite- and if he says it's good... bring it to the bank!

Crap... all this sauce hanging around... the MI folks will be thinking I cook "BBQ" or something...
