  • Homemade Mango Habanero Sauce...Then Some Wings!!

    Well I was chatting with RowdyRay this past winter and he pointed out his Sauce... So I waited and waited till I could get some ripe Habanero peppers from the garden and then it was time to go... this weekend was game day!!

    So here are the players...


    Here is the recipe that I used slightly modified from Rays..
    Ingredients:
    4 Mangos, peeled, pitted, chopped
    4 Habanero peppers depending on taste, stemmed
    1/2 medium onion, quartered
    1 cloves garlic, peeled
    1/4 cup diced or shredded carrots
    1/3 cup white wine vinegar
    1/3 cup sugar
    1/4 cup ketchup
    1 Tbs. oil Salt to taste

    Directions:
    1. Heat oil in saucepan and cook garlic, onion, and carrot a few minutes.


    2. Then add habaneros and mango and cook about 10 minutes.

    3. Add vinegar, sugar, and ketchup and simmer for 10 minutes.


    4. Blend in blender until desired consistency. Add salt to taste. Add a bit of water if sauce is too thick.


    I processed in water bath so that it is shelf safe. Here she is out of the bath.


    This stuff it thick.. I left it that way cause it cut down on the canning and I can always thin with other stuff once we open and use it!! Think thick baby food constituency.

    Man this stuff is hot and has great flavor!!

    So I got out some wings for this first trial... oh it was a great choice!!

    Here are the wings on the weber.. just salt as the first layer...


    Thinned the sauce with a bit of fresh cider... and then started coating the wings.


    Then off they come!! Oh man this stuff has great flavor... cant wait to use again!!


    Flavor was sweet with heat!! Just the way that you want it and would think it would be!!

      Love the color on those wings, they had to be good!
      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
      My best asset however is the inspiration from the members on this forum.

        Glad you tried it. Love the stuff. Of course, I've messed with the original recipe several times. Use 6-8 habs now. But that's the great thing about recipes. I do the same thing, and can it. Have a couple jars left from last summer. Will make more soon.

        Everyone loves it on wings around here. Awesome on corn chips or tacos too. Mix some into butter and put on cobs of corn before hitting the grill. Lots of uses.

        On edit: Mix some into cream cheese. Great on crackers, bagels, toast and ABTs.

          That sounds great, the wings and the sauce!

          Might have to give this a try if I can find some mangos.

            You know, they do look great. But with all that habanero built in we really do not know how they taste. I suggest that you include home delivery so we can determine if they are too hot.

                Looks fantastic! I just bought a bottle of Mango-Chipolte sauce and tried it on a pp Sammy. I really liked it!

                Whats your technique for removing the pit from the mango they can be a bitch to work with!!

                  This is a video for making dehydrated mango chips. It shows a good technique for cutting up mangoes. Nothing easy about mangoes. But TOTALLY worth the effort. I have a 700 watt Nesco with 9 trays. Mangoes are especially good.

                      yeah I am with ya on that... Since appearance was not an issue.. was going to just chop it up anyway.. I just sliced around it and hacked it up one piece at a time.. sampling here and there... I picked the most red and yellow ones they had at the store and then let them sit in the brown bag for two more days to get extra soft and sweet.

                          I don't peel them. I cut around the pit as much as possible. Then I take a spoon and separate the fruit from the skin. Works pretty good. I have seen mango corers on Amazon I might give one a try.
