  • Bacon Scallion Cream Sauce

    As requested by Becky...
    Thought I would just post it up for all to see...
    Hmmm...No pics...But give it a try...

    Just a recipe I found on the net...
    Only change I have made is more bacon...
    Seriously one slice of bacon is a joke...

    Ingredients
    3 T. butter
    1 thick slice bacon, chopped
    3 T. flour
    1 1/2 c. chicken stock
    3/4 c. heavy cream
    1 T. CBP
    6 scallions, white and green parts,
    thinly sliced, plus extra for garnish
    Salt to taste

    In a heavy saucepan, melt butter over medium heat. Add bacon and cook for 3 to 5 minutes, until fat has rendered.
    Add flour, then stir together and cook over low heat, stirring often, until golden and toasty-smelling, 4 to 6 minutes.

    Add chicken stock and cream, and simmer over low heat until reduced to a thick pourable gravy, about 10 minutes.
    Remove from heat. Stir in pepper and scallions, and taste for salt, adding more if needed. Serve hot.



    Anyway that's how the recipe reads...Basic gravy cookin with bacon added...
    Goes well anywhere you want a savory sauce/gravy...

          1 thick slice bacon could be almost anything on the pig. Just throw a whole belly in there and be done.
