I thought I had posted something like this some time ago, but couldn't find it. Anyway, just some of the many names I've found for this particular cure. Some I've used, and some I've just come across from the supply houses. As you can see there are a great many names, some generic and some that manufacturers have stamped as their own. There are certainly many more. As you can also see the names frequently refer to speed (fast, quick, etc.) This cure is generally (but not always) used in quick applications i.e. sausage mixed and stuffed one day, and smoked the next. Whereas sodium nitRATE is used in slower, long term curing operations, its names will often imply that. The point is this;, just like you would with medication, be absolutely certain that the active ingredient is what you want for the particular application you are using it in. Know what you are doing, don't guess.
