  • Seasonings for Hot Dogs

Going to make a batch of venison dogs. Lots of different recipes out there. Some have mace, others have coriander and nutmeg. Heard a lot of good things about the Curlies old fashioned weiner mix but don't really want to do that. My last batch was good but could have used a bit more flavor.

I know I will be using white pepper and garlic, but still trying to conjure up a good spice mix for the rest. Any suggestions??

That hot link recipe I did last week had good flavors, and you could adjust the heat to where you want it.

I got nothing on the prototypical HD. But I Do know... I like a pronounced garlic and onion presence. Coriander is in the Mad Hunky rub... Would you consider a MH emulsified trial? I'll donate the spice

I'd take you up on that one, if he doesn't.

I think he also did a sausage but for the sake of me remember the ratio but I am guessing 1 1/2 tsp per pound of meat or 1 1/2 Tbls per pound me thinks. Not sure which one.
