    On edit- I think I found it.....

    5 lbs. ground pork shoulder butt
    3 T. kosher salt
    5 T. peeled and grated fresh ginger, preferred, or 1 T. ground ginger
    5 T. tightly packed, finely chopped fresh sage
    1 T. minced garlic
    2 tsp. ground black or white pepper
    1 c. ice water

    Mixing up a batch of this as we speak. Looks pretty good, will post results.

      I'm not sure what ya found but dry milk works also for most recipes

          Done. Stuff is pretty dammit good. Fresh Ginger and whole Sage from this years garden. Recipe calls for fresh. That stuff don't grow under 50+ inches of snow lol, so I took the dried and ground it up and used half of what the recipe calls for as there is more volume wise when its ground. Got patties freezing as we speak and will vacpak in a few.

            Tried a similar to Big Guy's Sage patties.... I liked it OK, but still like the Jimmy Dean clone best..... Maybe after resting a bit it will be better than the JD clone? .... Here's what I did

            5 lb Pork
            1.5 T Kosher Salt
            1 T Dextrose
            2 T Sage
            1 t White Pepper
            1/2 T Special Meat Binder
            1/4 Cup Powdered Milk
            1/2 Cup Maple Syrup
            1/4 Cup Water



            I just added the missing ingredients from the JD clone, mixed again & its rocking.... Also added just a little bit of crushed Red Pepper flakes.
