    I finally got around to mixing up some of Darrel's mix this morning. Made up a 6 pound batch and stuffed into 32-35 hog casings and made 6" links.
    I couldn't help notice the great aroma when I first cut open the spice package, and it hung in there while mixing and stuffing. These are going to be good, but will have to let them set in the frig for a day before trying.

        Good stuff

        I was lucky enough to test it as well. I also thought the aroma was so awesome.

        From the time i opened the package to it resting in the fridge, it brought a great smell to the room.

        Better than the smell.....the taste.

            Nicely done..... Just grilled up my last pack of 5 big links for snacks for some buddies last night..... They were gone in no time..... Good stuff indeed

                    It's the next day and I was hungry, While linking sausage yesterday I had a blow out, so i made a patty out of the meat and just finished frying it in a pan.
                    Excellent stuff CP!, a nice amount of hot pepper or paprika, but it's not a hot sausage, and the fennel was right where I like it. All in all, a nice well rounded spice mix. Heck, it's a lot better then my own.
                    Wifes making some red gravy later today so I'll be adding some to that.
                    Then tomorrow I should be firing up the stick burner ( for the first time this year)so there will be a few more samples for me as grilled sausages too. stay tuned.
