  • Apple Smoked Summer Sausage

    For my birthday, I smoked summer sausage...........for someone else. Well anyway, He likes cheddar, but not a lot, so that's what I gave him. I use my own recipe and the cheese is just regular sharp cheddar you'd get from any grocery store. I smoked it in apple. It's quite good.

    Here is about half of it. I think he's giving the little one away as Christmas gifts. I made about 20 of those little suckers. Talk about a waste of precious smoker space.


    Here is the one I'm keeping for myself. I like more cheese, but this recipe is packed with flavor, so you really don't need it.




    No big deal, but since I haven't been around a lot, I thought I'd try to catch up some.

    Looks tasty! Got a question though. I'm gonna get started making my own summer sausage too.

    Does the smoke actually penetrate the SS casing?

        Gunny great looking stuff, the texture and moisture look perfect.

        Any chance to post the recipe?

        I need to order some meat glue from B and P, maybe some other things.

              The casings are perforated and fibrous for smoke penetration. The smoke really does get in there. I smoked these in apple and they have a really nice mellow apple flavor. Hickory and oak is a bit more robust, and the flavor does comes through.
