  • Pickle Sausage

    Been a long couple weeks have not had much time.Been thinking about some pickle sausage T-H shared at the deer lease a while back. So I thought I would have a go at it. Had some chicken sausage in the freezer and some fresh bratwurst rings. sound good to me. The last run of chicken link with 2 tbs of 90K red pepper might have been a little much. Ken and I fired some up at the chili cook off here a while back. Man we got the hic-ups started sweating man they were gooood. Any-who I made pickle sausage tonight.

    Found I had pickle mix thats got good flavor.(Mrs. Wages)9.3/4 oz pack.
    5 cup distilled vinegar
    11 cups water
    1 teaspoon 90K red pepper (should be a plenty)
    1 large yellow onion
    5 clove fresh garlic
    8 mid carrots

    Mix vinegar and water and garlic heated to a boil. Used two rings of sausage the rings were venison. 11 chicken link, 3 were them hot rascals...Cut up veggies placed all in a 1 gallon pickle jar. After liquid boiled poured over all left about an inch of room at the top and sealed with led. Will wait till settles down to room temp and store in ice box till the next trip to the deer lease. And do a test run on my buds....













    I had to hold one ring back for the cook. There you go.

      can't quite get in my mind what these'd taste like - but definitely another one for the project list.
      I don't honestly think I've ever seen pickled sausage for sale anywhere in the uk.
      lol maybe yet another food niche for me lol

      Looks like a good jar full - any idea what's in that pickle mix.

      Or failing that walking dude, what pickle spice do you do - I remember you had a couple of pickled sausage threads on smf a while back.

      Also what type of sausage works best for this ?

        the pickling spice, is summin you can purchase already made up........

        i used kielbasa when i did these last, but any sausage you like is a good candidate for this recipe.

              Smoke Doc, Great job on the pickled sausage, cant wait to hear about them. I love Pickled sausage, next batch of sausage I make will go in my large jar from the pickled eggs I am about finished with. Thanks for the pics and recipe you done gooooood!

                The mix is a quick dill mix the brand name is in the earlier post you can pick up at most food stores. We use the same for pickling cucumbers. And you know how we are can not leave well enough alone. T-H there will be plenty for the deer blind work will not crack them open for two weeks...MAYBE??? will try real hard not to.
