  • What do you do with subpar snack sticks? You pickle them.

    Well after the new seasoning mix I tried on my snack sticks turned out a little disappointing I figured a good way to get rid of some of them would be to pickle a few jars. I have never made pickled sausage before but I love anything pickled so I can't wait to give them a try. I pretty much followed the same recipe that Walking Dude had in one of his posts. I'll let you know how I like them. I'll probably bring a jar to work and I'm sure they won't last long.

      Great experiment Ross, look forward to hearing results!
      When we have have sausage experiments go sub-par on us in the past we have been known to add it to our chili fix'n... just another idea!

        I actually like the taste of the sticks a little better today. My coworker that was at my house last weekend and had them also said they tasted better today for some reason. I have been wanting to try some pickled sausage since I love making pickled eggs and fish already I figured I might as well add sausage to the arsenal. I know my father in law will love them for sure as I always pickle eggs and gizzards for him and it's like he is in heaven.

            You know my wife and I follow a 2 week freezer test with sausage, In my opinion it improves with freezer time.

            Now this also brings to mind the subject of taste testing off the grill while stuffing... I swear taste testing sausage while stuffing is the best the sausage ever tastes; only outside factor that might be influencing these decisions may be the booze being consumed while stuffing!

              BTW used some of the "Hunter's Marinade" on some prime slices I froze from NYE... niiice... got some heat and a LITTLE sweet...

                I've done the same with "not so good" sausage. Pickle them up and take them to the local pub, they'll fight over them cause free food always tastes better then bought food.
                I will get a couple beers out of the deal anyways.

                      I still need to try mine. I was thinking about it the other day. I better get some venison back straps out of the freezer this week.

                          I'll agree with the freezer test,Marty.I think Summer Sausage is better after frozen figured is was something with the ECA.Flavor is better and more of a Tang.

                              When I was growing up my Dad owned a barber shop. He had a friend named Shorty who was a butcher. I always knew when Shorty dropped by because Dad would come home with a big gallon jar of pickled sausage. Man I loved those things. They were vinegary and a little spicy...man they were good. I'll bet yours are too.

                              I sure miss Shorty's pickled sausage. Guess I will have to make some.
