  • 30#'s and 4 Different Flavors of Sausage

    Today I made up a few different flavors.10#'s of Polish,10#'s of Checkered Past's Hot Italian,5#'s of B-P Cajun and 5#'s of B-P Jalapeno Brats.I added 5 de-seeded Jalapenos and an 8oz.can of crushed Pineapple to this.I got the B-P mixes from Fishawn.Simmered a couple of the Jap Brats in Beer for a while poured out the Beer and browned in butter.Pretty good,the heat was just right.Next time might use less Japs,a little too much Jap flavor.Thanks for looking.

    What ya got going for a binder, CH? Seriously..try CA's milled oats. Good stuff as always from ya, ya sausagehead!

        Very nice! Would love to sample the one in the last pic. 30 LBS is a chore, or at least it would be for me.
        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

                I assumed the pre-made mixes had binderAnd I didn't put any in the Polish or the Italian.I usually use B-P's Meat Binder.Might have to try the Oats.Thanks for the Points and comments everyone

                            Been really busy Ken, but definately want to try your 5 pepper rub in a hot link...... Starting to just thinkin aboot it... .... I like to take a finger sample oot of the jar every now & then, usually when I need to drink a beer real fast or my wife is coming home

                            Just took a 2x finger sample in your honor & you might wanna rename it 5,000 pepper rub ....lol.... It's goooood & HOT!

                              I hope I get some time to experiment while I'm home. Got the first two weeks booked, and 3 July is my first sausage making day. Already have 5 different recipes I'm going to do for my party. I'll have one full week at home that Mrs. Seboke will be back to work. That's when I hope to get creative. She said I have to stock the freezer with sausages before I leave. Not sure if that meant "you may" or "you'd better", but I'm not complaining either way!
