As I recall, a little sugar, some soy protein, and a little more salt. and some cure to make it little safer.
Smoked all the way to internal of 150-155ish, then ice bath, then hang to dry.
Turned out OK, but I added some more heat to the next batch and used sheep casings.

Thanks fish, I am always willing to share, both the good and the bad
I quickly found out that I didn't know squat until some fine folks "shared" techniques, recipes etc. with me.
If anyone is interested in brats that have the flavor and texture of a cardboard box, let me know.....

looking pretty good
How much jd to meat poundage did you use ?
Made some whiskey sausage a few years back - don't think I wrote the recipe down
Think we've got some JD in the booze cupboard. I know I didn't drink it

I think is was 1 cup per 5lbs, probably will up that next time to 1.5 cups.
