  • Sack Sausage?

    Hey all! I'm looking for a recipe for a product called Sack Sausage. We've been gifted with some from a meat shop somewhere in Arkansas in the past and I'd love to find a recipe for it.

    It tastes like a smoked, fermented sausage that has a hint of maple syrup and some heat to it and comes in a cloth casing. The casing is about 2 1/2" like summer sausage. Slice it and fry is what we do with it.

    Huh. OK this is a mystery. Like a cotton cloth... tube shaped?

    Sounds like something VERY local/regional perhaps?

      I have some old cooking/curing/smoking books that I remember showed how to make a sausage casing out of cloth, butt don't recall a recipe with it. I will try to find it, maybe it's in it

          Found the book that shows how to make muslin sausage casings, though there were no recipes that had maple syrup or flavoring.

                I have only seen bologna made in a cloth casing. I'd like to give it a try

                  Thanks guys! Biglopez nailed it! Now to figure out how to control the aging process, if I recall correctly, a fridge and a pan of salt will provide the proper environment.
