  • Easter sausage Recipe.

    I have been hunting for this recipe for a loooong time and finally found it in one of my cookbooks I haven't made this yet but will in the future. It's been a little over 2 yrs since I asked on here about it and I know CA was looking for it. I've finally found it. This is one of the few Finnish foods that I like I will say it is some what bland to some folks but. So here it is :
    2 loaves of white bread 18-20 eggs
    3 to 4 lb. picnic ham, cooked 1/2 c. lard
    1 lb. bacon salt and pepper to taste
    1 bunch green onions chopped 1 large plastic casing

    Cut up ham and bread into cubes. Brown bacon, then cut up into pieces. In a large bowl, add the bread, ham, bacon and green onions. Melt the lard in the frying pan that was used to fry the bacon. Along with the bacon grease and melted lard, add to bread mixture and mix well. In a separate bowl,beat the eggs, then add to bread mixture. Make sure the bread is soaked good with the egg mixture. season with salt and pepper. Now you're ready to stuff the casing; you might need another person to help you with this. While one person is holding the casing open, the other person can be stuffing it with the bread and ham mixture. Do not over stuff! Tie the casing at one end and place in a large jelly roll pan. Bake in 325 to 350 degree oven for about 1 hour. Cool before slicing.

      what sort of size loaf of bread are you using. ?
      And what sort of weight is the final beast ?

      Not sure about it as a sausage but it'd make a great picnic loaf

      Also it'd need 2 of the 3lb ss casing I'm thinking. No reason you couldn't use a stuffer either that I can see

      have some 'really odd sausage recipe' :-)

        Thanks CA for the odd sausage points as for the bread loaf sizes ??? I think just standard store bought loaf. How have you been?
