  • Fresh ramp sausage

    My brother was good enough to go out and pick some ramps for me.I told him I wanted to make some sausage with fresh ramps. so he brought me a playmate cooler full ,i trimmed them up and got started all the pics didn't down load to photo bucket but I have 2 any how

    and here are the finished product I may smoke half of them becuase they are similar to a polish



    Here is what is in them
    3.5 KG, of pork
    70 gram salt
    10 grams pepper
    10 grams of mad hunky
    6 grams allspice
    2,1/2 cups of minced fresh ramps
    8,3/4 grams cure #1
    1,1/2 cups of water

    they are a little salty I went with a recipe on line but didn't take into consideration any salt that may have been in the Mad Hunky.

    They wife liked them so the must be OK!!!

      Nice!...Ummm... that much Mad Hunky GP only has 2.4 grams salt.... so methinks the recipe was a bit heavy. Try dropping 10-15 grams and use the MHGP...

            I was a little worried about the amount the recipe called for when it said 20 grams of salt per Kilogram of meat
