  • Anyone Try This? Penzeys Venison Sausage Seasoning

    Friend of mine orders a lot of seasonings from Penzeys. She surprised me with this the other day. Got them free for ordering so much stuff. Two 4 oz. packages. Thought of me. Yeah, right. She wants goodies when I use it.

    My question is, has anyone tried this? The instructions are kinda vague. The website wasn't any help and can't find any recipes there using it. Says to use 1 Tablespoon per pound of meat. Pretty simple. But then it says, also good in summer sausage. There's no cure in it.

    Just trying to figure out what to do with it. Especially when you don't know what it tastes like. So many different ways I could go here. Maybe have to do a finger taste. Or mix some up and do a fry test and go from there.

    I think I would start by making it into a fresh sausage... 50/50 mix of venison with pork.

      That's what I was thinking. Then a fry test. Decide if it needs something added to it and if I want to stuff into casings. Just thinking out loud, I guess. Hoping someone had tried it.

        Looks like a kinda Polish style mix off the top of my head... Kielbasa stuff. You could always add cure. Use C1 obviously... look at that salt content!

          It's not really like either, and the salt is what really worries me. I'm supposed to watch it. That's why I like to mix my own. Not sure what to do with it.

          She was trying to do something nice. Maybe I'll make something up just for her with some leftover meat on another project and sneak a taste.

              I'm a big fan of Penzeys, however I haven't tried that yet. If its anything like the rest of their blends, it will be really good. They have the best brat seasoning I have found. Let us know how it turns out!

                X2 I like the Brat blend as well. I have never seen that particular mix but will buy it next time I am in the neighborhood.

                  Interested in what you come up with...... You thinking fresh, or a cured/smoked SS?

                  I have not ordered from them, but have heard good things...
