Here's a photo of the finished sausage "in action" -

Due to the hanging of the sausage and reduction of weight, the texture is very nice and the flavours have concentrated a bit, as well. I'd say that this turned out just about as I intended, and am very happy with it.

Searching the web for Russian Sausage and looky what I find. SMOKED-MEAT.COM

Anyway, discovered a tiny little russian store a couple weeks ago only a few miles from my house. They (Euro Slice Deli) in Renton WArshinGton sell pastries and HOMEMADE SMOKED SAUSAGE on the cheep. $5.49/lb +- for smoked sausage. Today I bought Bukovinskaya. Think I tried this before I realize they have the sausage name on the receipt. I just point to which one I want from the Russian lady. Last time I bought Wedding Sausage. Looks like they are all pork sausages, but I have been majorly impressed with the taste. I know how much work involved with making smoked sausage and trying different types at a reasonable price is the bomb.

      Aight - Carry on.

And this is why the forum prevails. Waking up old recipes to inspire those who make good food. I hope someone of sausageheads reads this thread and presents a great product. This one is a good read. Start from the beginning.
