  • Summer Sausage - Help!

    Hey guys, doing my first summer sausage. It is still coming up to the 155 degree mark (at 137 now). My question is, do I need to give it an ice bath when I get to the desired temp? How should I finish it off before I put it in the fridge?

    I've done it both ways, I do not find any difference in taste, texture etc, But it stops the cooking so they don't get to hot and fat out.

    If i pull before 155, around 150 or so, I don't give them a bath.

      I always hit them in an ice bath till the internal temp drop to around 100° then dry them off and allow to bloom for about 1-2 hours before I put them in the fridge.. This helps the casing from becoming to wrinkled..

        X2 The temp between 150 and 155 is crucial 155 is tops and fat starts to melt out and you need to stop that ASAP.

        At 153 it still cooks for few degrees.

          Glad I checked in with you guys, the kit instructions says to cook until 156!

          So if I pull at 150, let it rest and when it gets to 154, ice? Sound good?

            I may be late on this but I always go to 152 - 153° then pull and hit the ice bath.. No Rest till it is out of the ice bath at 100° to bloom..

              I always go with the water bath.

              I remember a few years back - can't remember who it was - they just took the sausages out of the smoker and stuck direct into the snowdrift in the garden :-)

                Thanks guys! I ended up pulling at 153, ice bath til 120, then in the fridge overnight. Tried it just a bit ago, turned out great! Thanks again!
