  • Venison Potato Sausage

    My good friends dads been bugging me to make some venison potato sausage. We started with 20lbs Venison, 20lbs pork butt, 20lbs Yukon Golds, and 10 onions. I said holy moly this is a lot of sausage.
    I used Marianski bothers ( potato sausage ) I deviated a little I used potatoes not potato flour.


    I double ground thru a 1/4 inch plate.
    Added all ingredients.
    Since I don't have a big tote to handle 60lbs, wiped the table down again with Clorox wipes and mixed it together in the middle of the table.


    Stuffed with 42-44mm hog casings
    Came up with 62 one pound rings.


    This is the second year we made this recipe. It's a very tasty.

          Maybe next year, reserve a few pounds and throw some cure in there and smoke them sounds D Lish.

            That a lot of sausage!
            Looks great. Are you using raw onion and potato? and does it make for a real wet mix?

              I did use raw onions and potatoes.
              We learned from the last few years it does make more moisture, so I cut the water in half to start off, with then add as needed.

              We did find out to par boiling the potatoes, so they don't turn black. Then we ground thru a 1/4 inch plate.
