  • Pickle and Pimento loaf

    After making some brats Sunday I had 5 pounds of ground pork left, original plan was more brats but while working started thinking of how much I love this stuff. So did some research. Most recipes were 70% beef, mine ended up being 50/50. On the way home from work I stopped and got the pickles and pimentos. I found a recipe from deejay debis site and knew it'd be good. She just ground hers once according to instructions. So all I had to do was mix and stuff.
    Mixed

    Stuffed into 4.5" high moisture barrier casings. Had a pic but phone didn't save it they went into 170 degree water bath for about 2 hours then into ice water bath. I couldn't wait to try tonight, so I grab some slices for my lunchbox.

    This stuff is so good! I can't wait for dinner I hope as I get into the chub I have better pickle distribution, I'll find out tonight when I slice it all up. Thanks for looking!

    That looks wonderful!! bet that went well with a few crackers for sure!!!

        Or on wheat bread with miracle whip and a slice of cheese good thing I made 2 otherwise I'd have nothing for dinner

              All sliced, ended up with 26 packs of 8 slices. That'll be 4 sandwiches per bag. Next time going to dice up the pickles better and maybe up the amount they're kind of scarce but still taste great I think I have to stop making sausage for a bit all freezers are full.

                Pickles look like got dispersed fine to me!! 4 sammies per pack.... that does not leave any room for snacking... I say you only will get 3 per pack

                  My mother made the same sort of thing but she made it in a sandwich spread.

                  It looks way better, probably even tastes better in sausage form then in a sandwich spread.

                    Man, that looks excellent! As a kid, that was me favorite sandwich. On white bread, cheese slice and mustard n mayo

                      He hasn't had much of an opportunity, he tried a bite last night and said he liked it. When I was slicing and packaging he was outside screwing around.

                      As soon as this is gone next up to try is macaroni and cheese loaf. Never had it, sounds interesting.

                          Tasty! Looks great. I have been experimenting with olive loafs. After some research I've found that taking NFDM and grinding really fine. Then coating the olives in it prior to mixing into the meat helps bind the olives to the meat and achieves better distribution. May work with the pickles too.

                            I'm guessing that helped with slicing? My pickles wanted to fall out.

                              Quite possibly. Have you thought about leaving the pickle whole. Using small petite pickles? Or using larger chunks?
