My parents were supposed to come into town over Christmas weekend but some snow storms kept them in Wyoming. I had already thawed a butt to make sausage with my dad while he was in town...so the show must go on!
Here is about 7 lbs of pork butt and about 3/4 lb of bacon cut and seasoned. I added granulated garlic, minced garlic, some onion powder, red pepper flakes, kosher salt and black pepper. I also minced some fresh parsley. I wrote down amounts and can add the specific recipe later if anyone wants it.

After grinding I gently mixed in most of a bottle of Dundee Honey Brown

I plan to brave the snow and grill a few of these tonight for dinner. I will try and get a pic of them cooked up. The sample I fried up Sunday night was outstanding!
