  • Stuffing Summer Sausage Casings?

    Santa was pretty good to ol Fish & one of the things he brought me was a Summer Sausage kit from Hi Mountain. I have not stuffed SS casings since my crude attempt at it 20 or so years ago. Any suggestions or tips for stuffing these things? There were no stuffing directions or tips with the kit. Do I soak the mahogany casings?.... etc. THANKS!

    Soak in warm water for about 30 minutes.. Then when stuffing be sure to stuff tight.. As you stuff the casing squeeze the meat to the end with a firm grip.. This will make sure you have no air pockets and the meat is compressed good..

      What TH said. I tried the High Mountain SS kit one before and thought it tasted pretty good. Going to try the Curley's kit this year.

        Yeah, I got a suggestion. Throw some whole peppercorns and cheddar cheese in there too.

          X2 what everyone else said, plus throw in a splash of vinegar to the water you soak the fibrous casings in. This helps prevent the casing from sticking to the meat,...when you peel the casing off, it won't take chunks of your meat with it.

            Awww hell, throw some whole mustard seed in there too!!!

            You can pack em tight without worrying about blowouts.
