  • chitlins

The other day whilst grocery shopping I came across three or four packages of chitlins in the meat department. This is something I had never seen in a grocery store before, and I figure it must be something to cater to our growing population of folks from south of the border.

Anyway, it got me wondering. Chitlins are just pig intestines right? So could they be used for sausage casings? I figure they're probably not in the best shape, holes and what-not in them. And probably need to be cleaned really well. But at 5 lbs for 99 cents, seems like the price is right.

    Thoughts?

I have no earthly idea what they can be used for other than landfill. I have seen them cooked, I have smelled them cooked and my only suggestion is, if you buy them, is to use them to make your compost bin decay at a faster rate!!

So... I'm guessing you guys aren't sausage fans then?

CA, I have no idea how to cook them either, they're not exactly standard fair up here in the northwest. More of a southern/soul food thing from what I gather.

Just thinking intestines is intestines right? Must be something different though since these are 99 cents for 5 lbs and normal hog casings are around $10 for 8 oz.

I think they are chopped... making them useless for sausage casings. But then again, I never had them. I HOPE they are chopped.

But if you want air your house out for several days just to feed the dogs...Rock on!

I've never tried chitterlings either but the area I grew up, Ypsilanti, Michigan, was a huge industrial area and many of the residents were transplanted from the south both black and white. All of the area grocery stores carried them. It seemed to be a special holiday dish at a friend of mines house but the rule they had was "if your going to eat them then you have to help clean them". I'll just say due to the stench I never helped with the cleaning.

have to admit - I wasn't going to dry them in my dehydrator.

I actually quite like the smell of hog and sheep casings. so maybe I'd be a chitlin' fan - who knows I've certainly eaten worse
