  • How I make Brown N Serve Breakfast Sausages.

    Whenever I run out of casing and still have meat in my stuffer, I like to make brown n serve type sausages instead of patties. Here is how I do it. This is bratwurst meat that I have left. I like brats with eggs and hash browns.

    I cut waxed paper the length of a cookie sheet or a large cutting board and about 1 to 1-1/2 inches wide. Then I just crank out the meat and pull the waxed paper as I would a casing making sure to "steer" (for lack of a better word) the waxed paper to catch the meat. Then I lay each strip of meat on the cutting board like so.........


    Then I freeze them. Once frozen, I take them out and cut them to a couple inches in length.




    Then into a zip-lock. This way we can take out just what we need and put the rest back. I don't vac pack them because they'll be gone in a couple of weeks.


    Here they are this morning. Just enough for the family.


    And now they're ready to eat.


    I used to actually pick my stuffer up and have someone turn the crank while I guided the meat onto cookie sheets. But when I got my ground meat jerky attachment it gave me the idea to use strips of waxed paper instead. It works very well, and is an easy way to make brown n serves.

    very neat - like zeeks caseless sausages but probably quicker to make.

    And using different sized stuffer tubes you'd get different sized 'sausages'.

    Have some ingenuity you clever old sausage :-)

                  they do look like the others you made. very good. and for some reason the meat always looks fresher then the stuff I but in the stores here.

                      Yeah, we could eat more, but my better half over did the egg dish. Made enough to feed the whole darn country side.

                          That's what I was thinking. I could eat all that for breakfast with some eggs. Probably shouldn't but I could.
