  • Chicken Cordon Bleu Sausage??

    Thought I would test drive a new recipe....

    Players for this afternoon...

    3lbs. Boneless Skinless Thighs
    8 oz. Swiss Cheese 1/4" thick slices
    8 oz. Diced Ham
    1/3 Cup Italian Bread Crumbs
    1/3 Cup Graded Parmesan Cheese
    1 Tsp Thyme
    1 Tsp CBP
    1 Tsp Salt





    Diced up the cheese.. This was Baby Swiss..

    Mixed the dry seasonings as well... I wanted to run them through the spice grinder but the damn POS gave up the ghost on me..





    Ran the meat through the 1/8" plate... I wanted a little finer sausage for this...





    First I mixed the dry seasonings in the meat.. Then mixed 1/3 of the cheese at a time till gone.. I did the same with the ham & bread crumbs..






    All mixed and ready to set in the frig for about an hour for the seasonings to meld...

    Trust me the ham is in there...






    I had a helluva time stuffing... I had nine holes in one length of casing.... I used sheeps casings.. 26-28mm


    I do a fry test before stuffing... Tasted OK, but didnt want to add any more ingredients till I test drive these links first..

    We will see....





    Not sure if I will pan fry some of these or grill them..

      Very nice Ken. Those sheep casings should make them nice and tender even though they are a pain to use as opposed to hog casing. Can't wait for the grilled, cut, grease dripping out, melty cheese pics.

        Why not pan fry AND grill some

                Excellent idea. Let us know what you think in the end.

                Had the same issue with the darn sheep casings. Haven't had the greatest of luck with those. Those chunks probably didn't want to go through the stuffer very well either, with the thinner tube. Now in a hog casing and grilled, you just might be onto something.

                        OK I guess Grilled is out of the question... I finished watering my plants and went to get my Weber... Looks like my son moved it when he mowed the lawn.. Or hit it when he mowed the lawn...

                              If you have a closed top drum. You can use it to fit the drum and make good tight for a wonderful UDS.
