    Yes. And I was thinking scallops next time instead of shrimp. Maybe over a fillet of seared sea bass!!!

          I posted the recipes in the recipe box and here now.

          Greek Shrimp with Seasoned Orzo

          This is my version of this old recipe.
          We make this with a Greek salad ( with or without the potato salad ) and a good crusty garlic bread.

          1 Tbs Olive oil
          1 clove garlic - minced
          3 med tomatoes - diced
          1 Tbs tomato paste
          1/2 cup dry white wine
          1/4 tsp crushed oregano
          2 bay leaves
          crushed red pepper to taste
          1/2-2/3 lb large raw shrimp
          1/4 tsp white pepper
          1/2 cup crumpled Feta Cheese

          1. Heat oil in a large skillet-add garlic & tomatoes and saute over med-high heat until tender ( about 5 min )

          2. Add tomato paste, wine, oregano, bay leaves, and red pepper. Bring to a boil - then reduce heat to med-high and cook until slightly thickened. ( about 2 min )

          3. Add shrimp, just lay on top, don't stir in. Reduce heat to low, cover pan and cook til shrimp are done. ( about 10 min )

          4. Remove from heat, discard bay leaves and season with white pepper. Sprinkle Feta cheese on top and recover pan and let cheese melt from heat of the sauce.

          Tips
          Recipe can be doubled, but only add one extra bay leaf.

          Serve over cooked Seasoned Orzo - See recipe for Seasoned Orzo

          Could serve over rice or other pasta instead of Orzo

          Seasoned Orzo

          This is the recipe we use with the Greek Shrimp and Seasoned Orzo

          3/4 cup Orzo
          2 tsp olive oil
          1 Tbs minced parsley
          1 1/2 tsp grated lemon peel
          Salt - to taste
          White pepper to taste

          1. Stir Orzo into med pan filled with boiling water

          2. Cook until tender and drain well ---- DO NOT OVER COOK --------- will turn to mush

          3. return to pan and stir in oil, parsley, and lemon peel. Season to taste with salt and white pepper.
