Waited until things settled to post this.
As some of you know, I went trout fishing on the 15th. Got 3 nice Rainbows. Was on the fence on what to do with them. So, I fried up the smaller one and smoked the two larger ones.
Just used kosher salt for about 4 hours. Rinsed, and let get a nice pellicle. Then smoked with alder around 200 degrees. Rubbed with brown sugar, garlic powder and cayenne. Maybe a little too much BS, but real good. This is the first fish I've done, and consider it practice. Parchment paper really helped keep it from sticking too.
My buddy and his wife only got one fish, so I shared with them. He was pleasantly surprised. Never had smoked fish before. Said it lasted about 10 minutes. Lol.
