    Hoppin’ John Recipe




    This Hoppin' John recipe is a classic Southern dish of black-eyed peas cooked low and slow, traditionally with rice and smoked pork, a New Year tradition. It's an incredible dish you need to try.









































    Ingredients
    • 1 tablespoon olive oil
    • 1 large onion chopped
    • 1 large green bell pepper chopped
    • 1 jalapeno pepper chopped (optional – I like it for a bit of extra heat)
    • 1 stalk celery chopped
    • 2 cloves garlic chopped
    • 1 pound smoked ham chopped
    • 2 tablespoon Cajun seasoning blend
    • 1 pound blackeyed peas sorted through, rinsed, soaked and drained
    • 4 cups chicken broth or more as needed
    • Cooked white rice for serving
    • Chopped parsley for serving



    Instructions
    • Heat a large pot to medium heat and add the olive oil.
    • Add the onion, peppers and celery and cook them until softened, about 5 minutes.
    • Add the garlic and smoked ham and cook another minute, stirring, until fragrant.
    • Add the Cajun seasonings, blackeyed peas and chicken broth. Bring to a quick boil, then reduce the heat.
    • Simmer for 1 hour, or until the beans are nicely softened, but not mushy.
    • Serve over rice and garnish with chopped parsley.

    Jalapeno Cornbread Recipe




    This jalapeno cornbread recipe is incredibly moist and incorporates lot of spicy jalapeno peppers and cheddar cheese. Great for the holidays or an anytime side dish!

    Ingredients
    • 1 cup whole milk
    • 4 tablespoons melted butter
    • 2 large eggs
    • 14.5 ounces creamed corn 1 can
    • 1 cup cornmeal
    • 1 cup all purpose flour
    • 3 tablespoons sugar
    • 1 teaspoon salt or to taste
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon black pepper
    • 1 cup chopped jalapeno peppers + sliced jalapenos for topping
    • 1 cup shredded cheddar cheese or use a spicy pepperjack for extra heat



    Instructions
    • Heat oven to 375 degrees F (190 degrees C).
    • Whisk together the milk, melted butter, eggs and creamed corn together in a small bowl.
    • In a larger bowl, combine the cornmeal, flour, sugar, salt, baking powder, baking soda, and black pepper.
    • Pour the wet ingredients into the dry ingredients and stir together.
    • Stir in the chopped jalapenos and shredded cheese.
    • Pour the batter mixture into a lightly oiled baking dish and bake for 25-35 minutes, or until the cornbread sets and an inserted toothpick comes out dry in the center.
    • Cool slightly, slice and serve.

      Collard Greens Recipe




      This southern collard greens recipe makes the best collard greens you'll ever have, with lots of bacon and smoked ham, simmered low and slow until so tender. You'll never want them any other way.


























      Ingredients
      • 1 large bunch of collard greens about 3 pounds
      • 1 pound bacon chopped (smoked bacon is ideal)
      • 1 large white onion chopped
      • 2 jalapeno peppers chopped - optional (use milder peppers for less heat)
      • 1 pound smoked ham chopped
      • 4 cloves garlic minced (or more to taste)
      • 12 cups chicken stock 3 quarts
      • 1/2 cup apple cider vinegar
      • 1 tablespoon Worcestershire sauce
      • 1 tablespoon honey or use sugar
      • 1 teaspoon red pepper flakes
      • Salt and pepper to taste I use 1 tsp each
      • Hot sauce to taste a few dashes will do - use your favorite hot sauce



      Instructions
      • Thoroughly rinse and wash the collard greens to remove any grit. Trim the collard greens into ribbons and set aside.
      • Heat a large pot to medium heat and add the bacon. Cook for 10 minutes, or until they begin to crisp up.
      • Add the onion and peppers. Cook for 5 minutes, stirring here and there, until softened.
      • Add the ham and garlic. Cook for 1 minute.
      • Stir in the chicken stock, vinegar, Worcestershire sauce, honey, chili flakes, salt and pepper, hot sauce, and reserved collard greens.
      • Cover and simmer for 2-3 hours, or until done to your desired tenderness.
      • Serve.



      Notes

      I usually simmer my collard greens for the whole 3 hours, but they are nice and tender with a bit of bite after 2 hours. Just cook to your preference.
      Peppers are not traditionally used in most recipes, but I love them and add lots of them in for my own tastes.

        Thanks so much for sharing this delicious Hoppin' John recipe with the forum. I love trying out new and traditional recipes, especially ones that have a rich cultural history, like this one. The combination of black-eyed peas, smoked pork, and rice sounds absolutely mouthwatering. I'll definitely have to give this recipe a try, especially with the added heat from the jalapeno pepper.

        I'm not used to finding new recipes to try on a forum because I usually take them from the quick ez recipes website. They have tons of cool and unique recipes from all around the world, so you're sure to find something that interests you. Thanks again for sharing this tasty Hoppin' John recipe! Hope I will manage to cook it correctly.
