  • Pickled Eggs with Cold Smoked Jalapenos, Garlic & Onions

    Man I hope I put this in the right place..

    Evil Eggs! I like me a jar of pickled eggs from time to time. I made up two batches but this time used some Mad Hunky rub for seasoning and cold smoked some Jalapeno peppers, a Habanera pepper, garlic and red onion. All this went into the spicy brine and all but the peppers went into the standard brine. I got these bad boys canned and the count down to day 30 begins. Day 30 I break the seal, dip eggs in Tabasco and Big Pappa's Hot BBQ sauce and drink Guinness Stout! I'll be sleeping on the couch... Oh hell yeah!

    Ingredients:
    Extremely Evil Eggs (Batch 1)

    18 Large Eggs
    3 Cups Cider Vinegar
    3 Cups Water
    1/2 Tbsp Worcestershire Sauce
    1/2 Tbsp Mad Hunky Meats Rub
    1/2 Tsp Liquid Smoke
    1 1/2 Cloves Fresh Garlic (Cold Smoked)
    5 Jalapeno Peppers (Cold Smoked)
    1 Habanera Pepper (Cold Smoked)
    1/2 Red Onion (Cold Smoked)

                    I put them in the fridge. If they are sealed correctly they really should be able to sit on a shelf in the pantry but I always put eggs in the fridge.

                    No I'm wondeing if I should move them into the pantry. They might be even better after soaking in the pickle brine at room temp.


                    Any pickling and canning experts out there have any thoughts on this? This old dog likes learning new tricks.

                      No eggspert here, but I think I remember taverns having them at room temp on the counters long ago..... Or was that Hot Mamma's .... I'm with you on the fridge thingy, but am curious also what others say on this. Awesome looking eggs BTW Rob

                        I've made pickled eggs for years but always kept them in the fridge. Pickled beets, vinegar, cloves, and a dozen hard cooked eggs in a big jar. Eggs are pickled in about 3 days, and keeps for weeks. Good stuff.
                        Love your idea Rob, will have to try them.
                        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                        My best asset however is the inspiration from the members on this forum.

                            Yep Kell, I did! I have a way of saying just thr right things at the wrong time. And Ken has a way of listening to the wrong things at the right time. I guess I look to Ken to staighten me out. Or is that throw my big ass under the bus. But this is why I like it in here. Folks are havin fun and screwing with each other out of fun. And that Ken is good people.

                            I was enjoying some Jim Beam last night and it was all I could do to stay out of those spicy eggs! My bulldog Gus, he has been waiting for them too. He will fire one across the room that will yellow the blinds and send all family members crawling across the floor to the hallway for air. He loves them eggs and pulled pork fat.
                            Smoke it.. and they will come!
