  • Red Skin Potato Salad

i am not sure where i got this from. I am very sorry that i cant give proper credit to who created it. Debbie and i really like it.

    Red skin potato salad

3lbs red potatos, bakeded and cubed - skin on
1 16oz container sour cream, none of that low fat crap
1/2 cup dukes mayo – there is no other
    1 Tbs garlic powder
    1/4 cup onion, minced finely
2 oz bacon bits, yes the real ones
1 tsp Tony C's or Zatarains Cajun Spice
    1/4 cup freshly chopped chives
    1/4 cup celery
    1 Tbs dill pickle relish
    fresh cracked pepper
    cheddar cheese
    • bake and cube your potatoes.
    • mix wet ingredients with the spices in a separate bowl.
    • combine potatoes,celery,onions,wet ingredients
    • stir in bacon
    • sprinkle top with a little more bacon, chives and cheddar cheese
Good when warm, Better when you eat 3 hours later, Great refridgerated overnight

    be warned it is addictive

I am very fussy bout tater salad, and use a recipe that is off the wall a bit but is a hit usually. It's called "dockside" potato salad. Yours looks pretty familiar and similar and has to be good. Definitely going to try it, thanks for sharing.

That recipe sounds alot like mine. I think the key here is using Dukes mayo and as you said no girly sour cream. I really like it warm better than cold. Not to mention those AWESOME potato salad farts you get at bedtime.

I think all we have here is either Kraft or Hellmans. I do like the Hellmans myself, although the little woman has been buying the one made from Olive oil which is just OK.
