  • Your Wild Rice Recipes..?

    Since so many of use has purchased some wild rice recently, how about some of your favorite recipes to share with the group??

    As soon as I get done sowing my wild oats I will be looking for recipes meself. But for now I'll just be waiting for some of them wild recipes. good stuff.

      nothing special just wild rice,buttermilk battered fried quail. & a chicken/lemon cream gravy.

          Wild Rice Risotto

          1 cup wild rice
          2 cups chicken stock
          1/4 cup butter or peanut oil
          1 - 2 pinches salt (as needed)

          1. Heat oil or butter in a medium size heavy pot, medium high.
          2. warm chicken stock in another pot, add salt (if broth is sodium free).
          3. when oil is hot add rice and "fry" till white parts are toasted (light tan)
          4. Be Careful! It is going to steam and splatter! Pour heated broth into toasted rice pot. Again be careful! Bring to boil then reduce to simmer.
          5. For sticky risotto stir often till fluid is absorbed/evaporated. For dryer risotto let simmer unstirred for + 20 minutes, till fluid is gone.

          Put it onna plate with sometin else and eat it!

          You can also add sausage (cooked), chicken or pulled pork when you start simmering!

            here is what I like
            cook 1 cup of rice in 3-4cups of water and 1 beef bullion cube
            fry 8 strips of bacon and set aside,in same pan flour and fry just about any wild game ( this is a good way to use duck)and some onions and green peppers when all the meat is cooked and set aside use the same pan with dripping and make a rue with heavy cream. shed in your choice of white cheese,keep it rather wet
            mix everything together in a casserole dish and bake at 350 for 30 minutes
            at twenty minute take off the lid and grate on some parmesan and finish baking

            this has been the way we have always used wild rice and as i right it down I guess there is no real recipe for it.ITS JUST GOOD FOOD!

              No real recipie here,we'll just boil acouple cups till soft mix it in a pan with creamy mushroom soup add some bacon bits,some sort of wild game bird and bake in the oven till hot. pretty basic and pretty good:thumbAnd then theres the chedder and wild rice brats

                A lot of folks use it in hotdishes/cassaroles. Usually with a can of cream of something soup and some meat. Some quality butchershops use it in sausages, with good results. It acts as a moisture retaining binder with a bit of a nutty flavor. I have even used it as a meat substitute in chili I make for a vegetarian family member, and in a cold salad made with brocolli/cauliflower, crushed pecans, dried cherries/cranberries, s&p, and mayo. You can do a lot with it.
                Once you go Weber....you never call customer service....

                        I guess I would just put it in our family's Wild Rice Soup recipe. Or use in in our Country Wild Rice and Cheese sausage.

                          Until I posted my "wild" rice recipe, I didn't know the stuff I was using was cultivated and not actually wild rice. Glad I learned the difference. Now I'm looking to get some actual Minnesota wild rice.

                              I make this wild rice and white rice side dish that's lite and tasty.

                              1 tsp olive oil

                              1 large yellow onion chopped

                              2 large carrots peeled and chopped

                              2 stalks of celery chopped

                              2 cloves of garlic mashed and minced

                              In an heated large iron skillet add the oil
                              and heat it, then add the onion and saute
                              till transparent, then add the garlic and stir
                              till heated, then the carrot & celery and
                              cook till all is tender.

                              Have 1/2 Cup of uncooked wild rice measured and

                              1 Cup of uncooked long grain white rice measured

                              Have 3 1/2 Cups of Vegetable broth ready to add to
                              the hot vegetables.

                              2 Tb fresh chopped parsley

                              Add the broth and bring to a boil.

                              Next add the wild rice and cook for a minute and then
                              reduce heat to a simmer while covered for 25 minutes.

                              When the 25 minutes has passed open and add the white
                              long grain rice and cook covered for another 20 minutes.

                              When done sprinkle with the parsley and allow to rest 10 minutes.


                              Modifications:

                              This is the way I usually make it.

                              I've also used 1/4 of a green bell pepper diced with the veggies and a 14 oz can of diced tomatoes and cutting the vegetable broth to 2 1/2 Cups.
                              Add the tomatoes and vegetable broth and bring to a boil before adding
                              wild rice and then the white rice. Cook as above using the same times.
