  • Kick Ass Smoked Garlic Butter Spread

    Hey all! The garlic patch invaded the Mr's flower bed, so I cleaned it out and have been on the roasted garlic gig. This spread is by far our favorite, so I'm sharing.

    2-3 cloves of garlic
    1 - 2 t. bread dipping seasoning
    1-2 T. butter
    ~1/4 C olive oil
    Mix well & mash up the garlic, refrigerate for an hour or so to thicken up the butter and OO, then spread on some good bread.

    On the cloves, I add a small bit of butter on the top with a little salt and toss in the smoker. Pictures explain it.













    A person could leave the foil open a bit more if you want a smoky garlic spread. Even closed tightly, it definitely comes through.

            Love anything with garlic, is the bread dipping stuff basically a dry pesto ?

              SMARTASS! (so....it could be that someone neglected their SD starter and had to put in a SD 911 call to the Bassmaster to see if it could be salvaged....bubbling this morning so I think we are on the up tick!) Who the hell would be that stupid???

              The bread dipping stuff is a dry, Italian mix that you add olive oil to and dip bread in. The can is on that a neighbor gave us years ago and I just keep it filled with this recipe from Bassman.

              Herb Dipping Mix
              Yeilds ~ 1/2 cup

              1 t. crushed red pepper
              1 t ground black pepper
              1 t dried oregano
              1 t dried rosemary
              1 t dried basil
              1 t parsley flakes
              1 t granulated garlic
              1 t minced garlic
              1 t kosher salt.

              Mix well, add ~1 - 2 t. with a ~ 1/4 C olive oil. Makes one hell of an appetizer.

                Yeah, It really adds to the flavor - AND by doing that, you could go directly to the bread without all the other crap!
