  • Jicama Slaw



    This is a fine addition to any pork, beef, or chicken meal:

    Ingredients:

    1 medium jicama
    2 cups angel hair cole slaw
    1 (11-ounce) can Mandarin orange segments, drained, 1/4 cup juice reserved
    1/4 cup mayonnaise
    3 tablespoons apple cider vinegar
    1/4 teaspoon fajita seasoning
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 bunch fresh cilantro, leaves chopped

    Directions:

    1. Use a grater to shred 2 cups of jicama into a large bowl. Add cole slaw and Mandarin orange segments; set aside.

    2. In a small bowl, whisk together reserved Mandarin juice, mayonnaise, vinegar, fajita seasoning, salt, and pepper.

    3. Pour dressing over jicama mixture. Toss to mix thoroughly. Top with cilantro.

    4. Serve immediately.

    On edit: As shown in the picture, this can be served in its own bowl. Just save the outer leaves to form a bowl.

          Always wanted to try jicama. Only one store in the nearest towns carry it. Not going there due to covid.

                Thanks folks! I am not a huge slaw fan, butt this changed my mind completely!

                  I use jicama some. To me it seems kinda bland. So you have to do what you did. And you rocked it. Nice slaw. I do a shaved pork shoulder sammie with slaw. The next time I do it I will use this recipe. I'm using tapatalk so I can't give points so I'm giving you metaphoric points.
