Southern Fried Squash Recipe
Fried Squash are another great Southern favorite food. .
Scale
1 or 2 Yellow Summer Squash
1/2 cup Yellow Corn Meal
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
Oil for frying.
Wash the squash under cold running water.
Place corn meal in a zip lock type plastic bag.
Add the salt.
Add the black pepper.
Seal the bag and shake the ingredients until fully combined.
Remove and discard the ends from the squash.
Slice squash into about 1/2 inch thick slices.
Place squash in bag with the breader.
Shake well until slices are fully coated.
Place slices on plate or wire rack and let rest 15 minutes.
Place a cast iron skillet over Medium heat on your stove top.
Add about an inch of cooking oil. Let oil reach 350F for frying.
Carefully add slices to the oil. Let fry until bottom edges begin to brown. Flip slices over.
Continue to fry the slices until golden brown on both sides.
Remove from oil and place on wire rack to drain for a minute or two.
Serve warm.
