I use to be the same way.. Then one day about 5 years ago we had a party two houses down and my buddies wife made some potato salad with medium size chunks of onions, peppers, and celery... I fell in love with the taste and the texture.. It was like THAT's what's missing in my bland chicken salad..

I have been making it like this since.. To me it's biting into a fresh made sandwich, ice cold salad, fresh bread, nice thick slice of a fresh tomato (from a neighbors house) Screams Summer time good...

Thank you for your input.. If everyone liked all the same foods the same way, we would be a boring bunch of ass's eating crap from a drive through...

I'm cooking a cockspatched chicken tonight... Any leftovers are getting the T-H treatment..... I also like the crunch.

It's good to get outta the box once in awhile, especially with chicken salad, or any other kind of salad. One thing you can do is saute the veggies a bit before mixing them in... it will settle the crunch down...

Ken, it looks outstanding in my book... I like the crunch factor!

I just fell back in love with the chicken salad. Looks right by me Chief! It is a choice I make often for lunch sandwiches. Smoking them is by far the way to go. We make it for a weeks worth of lunch sandwiches. It holds no problem in the fridge in good tight Tupperware. I am going to share a link to a recipe that we use, that is similar. Not trying to one up ya Ken, but it seems like a good time to share, while the topic is out. If ya don't mind.

Nice... and "going outside the box" is not frowned upon here. I'm gonna make some crunchy stuff with the leftovers from the soup! YAY!

                              Good lookin' eats there, Ken!

My wife likes to go a step or two further with her chicken salad....she'll put halved seedless grapes and chopped walnuts in there, too...can't get her to like jalapenos enough to use them tho...

Now ya got me wanting to make some chik salad to go with those pickled eggs...
                              .

Have some spatchcock chicken leftovers from last night, am going to try this, like the egg addition. Might bend it a little w/ some blue cheese.
