        Thanks for all the great comments and points folks, it was a fun cook to do and Mikey, the taste was spectacular! Good piece of meat, Tatonka Dust, a good sear, how can you go wrong?
        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

                    I think I need to just up and tour the country and keep my eye out for who's cooking what where on here... hehe!
