  • Amaretto - a quick and easy recipe

For the holidays this year, we made some Amaretto to give to our friends a Christmas presents. I wanted to pass along a quick method for making it from scratch...

    Ingredients:
    1/2 cup Everclear

    1 1/2 cup water
    1/4 cup Apricot Brandy
    1/4 cup sugar
    1 tablespoon dark brown sugar

    2 teaspoons almond extract
    2 teaspoons vanilla extract

Add the water into a small sauce pan. Bring to a slow boil and take off of the heat. Add the sugar and brown sugar and stir until completely dissolved. Let it cool. Add the almond and vanilla extract and stir until mixed thoroughly. Stir in the Everclear and Apricot Brandy.

Put the mixture into small bottles, label and wrap with ribbon and a bow.

    Enjoy!

NOTE: This makes a lighter colored Amaretto, if you want a darker color, add a drop of red food color to the mixture to give it a darker amber color.

The state of North Carolina banned everclear so I can't get that. Have you tried any other alcohol?

This version is for the masses.... I prefer a bit more alcohol, so I add another 1/4 cup of Everclear and bump the Apricot Brandy to 1/2 Cup from 1/4. But that's just me!

Lots of people make it with Vodka, but you'll need to increase the vodka quite a bit to compensate. My preference is to use the grain alcohol/apricot brandy combination for the flavor profile....

          Here is one using vodka

          1 cup water
          1 cup sugar
          1/2 cup brown sugar
          2 cups vodka
          2 tablespoons almond extract
          2 teaspoons vanilla extract

          Cheers!

Here's another one using Vodka... This one will have a bit more almond taste than the one above.

            1/2 cup sugar
            1/4 cup dark brown sugar
            3/4 cup very hot water
            1/2 cup corn syrup
            1 1/2 cups 80 proof vodka
            1 tablespoon almond extract
            1 teaspoon vanilla extract

            Enjoy!

              Excellent recipe! Thanks for sharing.
I showed this post to the wifey last night, she likes her Amaretto at the Holiday's.
I'm picking up some Everclear on my way home tonight.

I made a double batch of this over the weekend. My Italian MIL loved it.

Searching for a good Anisette recipe now.

                      Modified version

Since the wife really loves Amaretto, I "had" to make a few more batches Because of that, I decided to tweak out the recipe a bit to make it have a deeper color and to improve the flavor a bit.

Here is the new and improved version (makes a bit over a quart)

3 cups of hot water (filtered water if can)
1/4 cup of dark brown sugar
                      1/4 cup of granulated sugar
Mix the sugars into the water and dissolve thoroughly

                      Add the following:
1 cup of Everclear (190 proof if you can get it)
                      1/2 cup of Apricot Brandy
                      4 teaspoons of almond extract
2 1/2 teaspoons of vanilla extract

After mixed thoroughly, allow it to cool and then enjoy over ice.

My wife says it is spot on, so that is the way it will be made from now on!

                      Cheers!

That sounds like a good recipe. A coworker gave me a small bottle of her homemade version. She uses chocolate extract, and it seemed to overpower the almond. This one sounds fruitier and probably closer to Disaronno which we really like. I might do up a batch this weekend.

                              Thanks for this Amaretto recipe.

I'll offer this Kuhlua recipe I've used.

1 quart filtered water brought to a rolling boil.

                              3 1/2 Cups of sugar

1/2 Cup of Yuban or Nescafe Classic instant coffee

                              1 Oz Pure Vanilla

                              2 Cups 190 proof Everclear

Pour 2 cups of the boiling water into a saucepan with the sugar and bring
to a boil until the sugar is dissolved into a simple syrup.

Pour the other 2 cups of boiling water into another sauce pan with the instant coffee and bring it to a boil making sure it's dissolved.

Allow these to cool and then combine in a large bowl stirring in the Vanilla
                              and Everclear until well mixed.

I store it in brown 1 qt Beer Bottles that have been washed out well.

You may try using this recipe modified so that you only use 1 3/4 Cup sugar and add 1 cup of Brandy into the recipe.

You can make a double Black Russian with this Kahlua
by mixing 1 Jigger (1 1/2 oz) Kahlua and 2 jiggers Vodka.
Pour over crushed ice in an Old Fashion Glass.

White Russian can be made with this Kahlua by mixing
1 Pony (one ounce) Kahlua and 2 Pony's of Vodka mixed
together and heavy cream stirred in to taste with an
ice cube. (you can use milk) Serve this in an Old Fashion glass.
