My wife said she picked up the "cutting boards/sheets" I mentioned that we have, at IKEA. I went to their site and came up with the webpage below. Not sure if this is the same, but probably is.

I use a big chunk of busted up Corian Counter top that fits over our sink if need be and keep it clean as it's too big to put into the Dishwasher....

Love to see a post on those and a template!
Yes, I made those. 1095 carbon steel hardened and tempered.

          Too cheap to buy knives.

Templates are easy. Just Google Image, "Japanese knives" and print them out.

Okay, here is a picture of my cutting board, made ~40 years ago....my first woodworking project. It has been taken care of (oiled) and it has lasted this long as a prominent board on our counter (as can be seen in the picture). I still use cutting sheets for meat.

Here is the home made forge to harden the blades.

It can get so hot that I had melt bricks into glass. :-)

Notice how easy it is to make one that is variable in length and can be stored away after use.

A leaf blower connected to a variable speed control, blowing at regular charcoal thru a perforated tube, that's all.

It can easily melt steel. (or vaporize a piglet in a few minutes, LOL)

The whole set up takes one minute to put together and take apart.
