    Dang, I wish you guys would stop. Been looking at these for a couple of years now, but haven't talked myself out of the money yet. Now with the recommendations of BBQ Engineer and Gracoman I guess I'm gonna have to drop the cash.

        just got my 14"er...wash complete...seasoning in progress...what a fine piece! daughter...who is a Chef...wow dad this is nice!

          I use carbon steel skillets daily. I would take one over cast iron for daily cooking anytime. I have found that once seasoned correctly their non stick is as good as Teflon. When it gets dirty a dip in water a wipe with a cloth and then a quick towel dry and it's good. These skillets heat quicker and more evenly than cast iron but, they don't hold heat as long as iron. Anything you do in cast iron you can do with carbon steel. Except corn bread. Now that you have a carbon steel skillet it's time to get a carbon steel chef's knife.

            Mega update!!



            I wanted to give everyone a mega update on the De Buyer carbon steel pans. I use the heck out of this thing, and it goes on the grill, in the oven, and on the induction range. It has settled in at a deep brown and darker at the top and on the back. It is as non stick as it gets, and I just have to rinse it out with warm water and hit it with a nylon bristle brush. This thing lays down a sear like it's nobody's business too. The bottom line is that I have this in multiple sizes, and It is a soldier that I frequently send to the front lines. Love this thing...if you've been on the fence, I will wholeheartedly endorse it.

                      Dana if you had to choose a size what would your choice be? I.e. I probably only need 1 pan. So what do you think would be a good all purpose size?

                        I cook for me and mrs. engineer, so meals for 2 typically...I have an 8 inch and 11 inch. The 11 inch never leaves the stovetop. I clean it up (hot water rinse and a nylon bristle brush does the trick) and wipe it with a small drizzle of oil and it goes back on the stove for the next round. The 11 inch dimension is measured @ the top of the flared sidewalls...the actual pan bottom is more like 8 1/2 inches. I think that's a great size for most things.
