    A bud at work brought me a pack of sausage from his hunt in South Texas...
    I thought he went there to shoot hogs But instead he scored a Nilgai...
    WTF?

    Sausage is made from the Nilgai and pork...

    A bit of searching...
    Nilgai is an Antelope from India...Goofy looking critters but it sounds like they cook up and eat well...Seems they were brought to Texas to be ranch raised but now they populate the southern part of the state...

    By the end of the week, if it ever quits raining, I'll be grilling the links and find out for sure how good (?) they are...

    Oh yeah! African game animals are superb table fare. I will take an oryx (gemsbok) steak over elk steak any day. Blackbuck, nilgai, oryx, all are just delicious.

      So let me get this straight, your buddy from work comes back from Texas with sausage made from an African antelope and pork (prolly wild).... Okay!

      How was/is it?





      "Couple of animals managed to escape from private ranches leading to formation of the large population of nilgais in the wild parts of Alabama, Texas and Mexico."
      Wonder how they skipped Louisiana and Florida..... Oh, those folks is hungry!

            OK let's try this again

            A guy I work with went hunting in Texas with family members on whoever's property...I thought he told me he was going to kill some hogs...Which his BIL did...But sometimes I don't listen so good and maybe that wasn't his intended target No matter...He killed a Nilgai (which I had never heard of)...The meat went to a packer in Texas...Who took his sweet ass time getting the finished product back to the kid that shot the beast...The sausage label said Nilgai and pork...I don't know so much about Texas but I assume they have access to pork that's harvested from farm raised pigs......Probably not wild...

            So on Monday this guy brings with him to work all sorts of snack sticks and tamales...Also packs of the sausages to give to the guys he works with...To bad for me that I didn't work on Monday I guess I'm lucky he saved me a pack of sausage

            As for tasting it...
            I thought it would be best to wait till it was thawed (and probably cooked) before I took a bite...But that's just me...

            Thursday...Maybe Friday...I'll damn sure be cooking and eating the links...

              Hell Ya! I have never had it either, or even heard of it. If AJ gives it a then I bet it's some good stuff. Be interesting to see where they took the flavor/seasoning profile.... Breakfast style? Andouille? Brat? Hot? Etc.

                I gotta think that the animals raised in Tejas have a markedly better diet than do those raised in Africa, therefore they would taste better.

                I have harvested deer that fed on scrub brush & have fed on grasslands & acorns... The former had a gamey taste while the latter tasted great...

                  You would think so but probably not so much. I know the critters across the border in New Mexico eat some nasty stuff. Creosote bush. tumbleweeds, desert grasses, and mesquite being their primary diet. As long as the meat was cooled down quickly, it will be very good eating.
