Guess I dunno if I’m an expert. I do know I’m self taught. My Dad used gas or Kingsford and lighter fluid. But if one of them tejas mo-fo’s mentions mesquite...

Here is what I learned. Try and use local hardwood. Seems to work around here. Got tons of cherry, apple, hazelnut orchards. And I am able to score wood off of craigslist easy enough. In fact here's a local ad. https://portland.craigslist.org/clk/...634643386.html

Yes sir, I think that is what most of us has / needs to do. harvest local woods I think but not sure every state has some great wood for smoking. Where I am at there is so much pecan every winter they cut the trees way back to support growth. and lump mesquite is in every store made in mexico. I love mixing the tow make a great smoke for my taste and all my buds. BTW welcome to the forum...

The 1st settlers here didn't know the woods but they figured out Buttonwood makes good smoke. You can still find buttonwood smoked fish around here. It grows along the beach, usually the 3rd tree species in. Red mangrove, black mangrove, buttonwood.
