Shagbark Hickory is THE best of the hickory woods to smoke with.. Much sweeter than the others.... I never have used Pignut Hickory, it does not grow in my area..

First hickory i ever cut/used was shagbark about 15 years ago.I have lots of bitternut along my garden acreage,which i have used last few years...Pignut grows where i camp in west virginia and i plan on getting some shortly...

The shagbark was more like a hearty pecan...VERY NICE!!!!

The bitternut is fine but stronger....I have another shagbark scoped out for drying...

My vote is shagbark if you can get it........

shagbark is the shiznit for hickory. it's also awesome blended w/ beech.

Any ideas which variety is typically sold in the commercial bags? There is no hickory growing anywhere within 1000 mi. of me AFAIK.

Shagbark what I can get in limited amounts round here, very nice wood. Bitter nut will be a tad harsher, so maybe cut it with some oak.

Commercial stuff is hickory, no gurantee what yer gettin there, whatever them folks have available be what goes in the bag. Much of it would be shag I'm guessin cause it's the most popular an grow's in lots a places.
