  • Artisan Boule Bread

    I got this recipe from another smoking site and decided to give it a try. This is a very crusty, chewy bread that works well for dipping in herb infused oil.







    I've got another batch already started. I'm going to make 3 loaves tomorrow. Good stuff! Thanks for checkin out my pics.

    That looks fantastic.
    Smoked turkey breast, super sharp cheddar, thin slice of sweet Bermuda onion, a couple of banana peppers, and some honey Dijon mustard served open faced.

          This is a no knead dough.

          1 1/2 tablespoons instant yeast
          3 cups warm water
          1 1/2 teaspoons salt (I edited this back from 1 tablespoon)
          6 1/2 cups flour

          In a large mixing bowl combine water, yeast and salt. Add flour all at once and mix with your hand until it forms a wet dough. Let set out until it raises, then begins to collapse or flatten out (keep covered but not tightly). Keep in fridge overnight. Sprinkle pizza peel or cutting board with corn meal. Form dough into two loaves and place on the peel to rest for 40 minutes. Place baking stone in oven and pre-heat to 450 degrees. Slide loaves onto stone and bake for 30 minutes or until golden brown. Cool completely before slicing.

              Thanks, Rich. It is a very easy bread to make. I actually got the recipe from DeejayDebi. It's supposed to last for 14 days so you can bake a loaf every day. Like she said, damn small loaves! My second batch I made 1 1/2 recipe so I can make three loaves.

                        quick question.
                        Is that bread machine yeast or the other stuff that's also called quick yeast but isn't suitable for bread machines ?
                        I'm thinking the other stuff as that would be an awful lot of bread machine yeast.

                          CA, I just use the stuff I get at Sam's Club called instant yeast. You can use packaged yeast such as Fleischman's (sp). I have never used a bread machine, so I'm not familiar with that particular yeast.

                            CA, Take a look at this website for a very brief explanation. If you want more look up active dry yeast(ady) and instant dry yeast(idy).

                              30 minutes at 450? Seems like a high temp? but your bread looks great so I will try it.
