  • First Prime Rib and it was awesome!

Well the in-laws where over for Christmas today and I smoked up my first Prime Rib. They paid for the meat and I smoked it sounded like a fair deal to me. haha. We just got back into town this morning so I didn't have time to rub the roast until an hour before it went on the smoker. I used some worcestershire, pepper, sea salt, garlic & onion powder. Next time I will rub it and let it sit at least over night. I smoke it in my UDS at around 250-275 with some hickory chunks and I took it to 136 then pulled it and let it rest. It was very juicy and just the right amount of pink. Being this was my first prime rib I was very happy and the mother in law said it was the best prime rib she had ever eaten.

    Just going on the smoker.

All done and about to rest for a bit.

Time to slice this baby up.

Niiice... That's how I like mine right there. Fortunately for us food freaks, we don't have to rise much above "good" to be great. It's almost too easy. But here- we strive for the best!

                        Great looking Rib!!

Had to fight the urge to buy one at the grocery store on Thursday. It's on my list, though.

I will be making another one again for sure. And I think the in laws are going to be wanting it again as well. I already went to the store and picked up a small roast and threw it in the freezer for the wife and I. I should have stocked up with many more while they were on sale. Maybe I will have to head back and see if the sale is still going on.

Yeah, if I find them on sale, I'm definately stocking up.

The one I saw was $8.99/lb. Good looking chunk of beef, but it wasn't in the holiday budget.
