    Yep here too. You can do that if you can do that if you have a dedicated fridge.

      Those are great prices. Hamburger here is 2,99. Chuck and 7 bone roasts are $7.99-8.99. Too and bottom round is $8.99. Tri tip is $5.99-13.99!

        Well tonight was the night.

        Trimmed up the roast. Removed the bones. Cold smoked with cherry for 2 hours. Then into the salt pack. Took about 2 hours to hit an IT of 125. Rested for 30 sliced and served with roasted veggies Au Jus and wasabi horseradish















        Enjoy!!!!

                                Flavor wise it's very beefy. Shrinkage not so much with this shirt of a dry age. Had it been 30-48 days there would have been quite a bit more.
