  • PA Dutch Chicken Pot Pie

    No crust involved here!! This is how we make in the area surrounding Lancaster County, kin of similar to chicken and dumplings down south.
    Start with boiling the chicken, then take chicken out and set aside to cool. Make slippery noodles with just flour, egg, water. Moms recipe is a cup of flour per person. One egg, increase to two if you get to 4 cups of flour. Salt. Add water to form dough. This is a sticky dough, I used my pasta roller so I had to make it a little less sticky. Cut into what ever shape floats your boat. Thickness should be about that of almost pie crust. Now here is where recipes vary, some add carrots, potatoes, onions, celery, but ours is just plain old chicken, seasonings, noodles. The noodles are nice and think an have a nice chew. At the table we spritz with some apple cider vinegar. Just always have, first time my hubby saw me do that he was like ewwww as he sat dashing Tabasco on his an I said take the heat out of that and it vinegar! He now also used apple cider vinegar. Sometimes add some crackers, sometimes not...

    Ha! Thats it! I grew up on that stuff. I do carrots n celery but gotta do vinegar. Nice job nieghbor!

      Can you give up your seasonings? how much of what? I assume you used the water from the boiling of the chicken? !!

        Seasonings are very basic, salt, pepper, some garlic powder and a little onion powder, and this time I added a little thyme. After I add the chicken back to the pot I add some dried parsley. PA Dutch cooking is not very experimental, just good old stick to your ribs food. This is one of my favorites.

        And yes, you use the broth from boiling the chicken. To that I added two boxes of chicken stock because I needed more chuice. My
        Mom used to add more water but I didn't want to weaken the broth.

          I think the noodles are actually the most important part of this to make it PA Dutch. They aren't "fluffy" like dumplings...they are more of a heavy noodle....
