  • Smoked Olive Oil How would You?

    Mods feel free to move this to where it should be.
    .I came across a post by Moselle on salt and SMOKED Olive oil.
    Heat, light and oxegen I understand will harm olive oil....so the question is How would you smoke olive oil..? Hey you Guys any clue?
    Salt I have done in a shallow pan and shook it about every 15 min,,,give or take. But olive oil...this is smoked after it is pressed...type in smoked olive oil in the serch and it will give you the site...also have a santa fe oil with chipotle chili.

    I was going to try cold smoking the oil.
    When you say "harm' what do you mean?
    I was thinking I would try to put the olive oil in a shallow pan and cold smoke it for an hour or so.
    That, or maybe I'll smoke some garlic and herbs and infuse the oilive oil?

    You gotta try these things.

      okay having watched a few promotional videos for smoked olive oil.
      Nobody sounds like they're doing anything special.

      So here's what I would do and a couple of 'outside the box' alternatives I just thought of :-)

      What i would do until it either proved ineffective or the oil went bad (does that EVER happen ?)
      I'd just pour it into a foil container cold smoke for 6-8 hours. Stirring the oil with a plastic spoon occasionally.

      Alternative method 1) heavily smoke rock salt crystals and place in the olive oil bottle.
      The reasoning: Salt is not soluble in oil. But the organic chemicals that make up the smoke residue are. So the salt takes on the smoke, the oil removes it. The salt is untouched and fully recyclable for future use.
      Either pour the oil through a sieve to remove the salt after a week or so - or just leave it in the bottle till the bottle gets empty.

      Alternative method 2) Buy some fishpond cintered glass filter media - with as coarse a 'hole' grade as you can find. Smoke it (hot or cold it won't care) for a good period of time.
      Get a large funnell and fill it with the smoked sintered glass. Filter the olive oil through it.

      Same principle as the first method - the oil will dissolve the smoke residue and not the glass. And you could just put the filter media directly into the oil as well - but it will act as a rigid sponge.

      Me I'd go with the smoked salt method if the foil tray method failed :-)
      I'd say the salt method is the simplest and likely to be the most effective :-)

            But surely it's more fun to make your own. Plus liquid smoke is exclusively made from hickory as far as I remember.

            Make your own and you can use any wood.
            Which opens up a whole range of aromatic woods and spices.
            Tea smoked olive oil, bay, rosemary or thyme smoked oil etc

            Just a thought :-)

              They do have mesquite now, , , I like the whole Idea Alex, definately has possibilities.

                  That's pretty smart for an English guy.
